With its nutrients, high water activity and neutral pH, food provides a unique medium for the growth of wide range of microorganisms that lose the safety and quality of food. Moreover, despite the unavailability of the previous microbial growth factors such dried food, food is considered as a typical vehicle to transfer different microorganisms such as Escherichia coli besides Salmonella sp., where food is a source of it. The main consequence of food microbial load of pathogens such E. coli and Salmonella sp. is food poisoning. During food handling which all process from source to table, food is exposed to the different biological, chemical and physical hazards which lose its fitness as a commodity. Despite introducing of new food preservation technologies and developing of new food safety systems, biological, chemical and physical hazards remain the main challengers in maintaining the safety of food. This challenge urges food safety authorities and producers around the global to develop effective food handling strategies and closely evaluate the efficiency of these strategies to ensure the safety of food in the food handling chains from farm to table. To achieve this goal, different food inspection modules and forms have been developed and implemented. Nevertheless, most of these modules do not follow food from its source and the processes which are conducted thereafter in food handling chain. For instance, food is inspected commonly and mainly in the markets, restaurants and retailers whereas the safety of its source and the hygienic status of the handling before these stages is not known. Moreover, with the new 11 developments in the hazards status and emerging of new hazards such as pathogens and diversity of food handling chain to provide food to the growing population, the concept of auditing and verifying the efficiency of food inspection modules becomes an essential tool to ensure the compliance of food premises with food safety regulations.

- Why and when did you decide to share your audit results?
The promotion page of the audit as it was received from Europe Books was announced in my profiles as well as has been sent to friends. Why: because it is prepared to serve academia and food industry in ensuring the safety of food through verifying the availability of food safety basic requirements from raw materials, through handling and preparing and to end products.
- What would you like to hear from your readers?
I will very please to hear that I provided a useful guide that could be used in teaching of food-safety related courses in universities and colleges and be a useful tool to replace the traditional inspection checklist since this audit can verify food safety internally by food safety specialists in food premises and externally governmental food inspectors.
- If you had to summarise in the results of your audit in three simple statements, what would they be?
It is a useful effective guide to implement and ensure food safety.
